Banana Bread

Ingredients

  • 1 1/2 cups flour, sifted
  • 1 cup sugar
  • 3/4 teaspoon soda
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 cup mashed bananas
  • 1/2 teaspoon salt
  • 2 tablespoons melted butter

Directions

Combine dry ingredients. Beat eggs and mashed bananas. combine the 2 mixtures and add butter.

Bake in greased loaf pan in 350F oven for 1 hour.

Hear's another time she used that steel knitting needle. If it comes out clean, the loaf is done.

Chocolate Wonders

Ingredients

  • 2 cups white sugar
  • 1/2 cup butter
  • 1/2 cup milk
  • 6 teaspoons cocoa (optional)

Directions

Bring to a boil, cool slightly and add:

Additional Ingredients

  • 1 cup coconut
  • 3 cups quick quaker oats
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla

Stir well and drop on wax paper. Place in a cool place to set.

For some reason, Gram would get very upset when Dad and I called them "chocolate T#rds, but we ate them - just like a chocolate bar.

Gram's Christmas Cake

Obviously this recipe came from the news paper. Gram cut this page from the Toronto Star Weekly in November of 1952. She liked it so much she wrote "Good, Good, Good" in the upper right side of the page.


This cake had a very heavy batter due to the amount of fruit in the mix. As I got older, it became my job to do the mixing. But it was worth it.

Ingredients

  • 1 cup shortening
  • 2 cups sugar
  • 5 eggs
  • 1/4 cup molasses
  • 4 cups sifted cake flour
  • 1 tablespoon ground allspice
  • 1/2 tablespoon ground cloves
  • 1 tablespoon cinnamon
  • 1/2 tablespoon salt
  • 1/2 tablespoon mace
  • 1 tablespoon baking soda
  • 2 lbs. seeded raisins
  • 1 lb. seedles raisins or currants
  • 1 lb. candied cherries
  • 1 lb. blanched almonds, chopped
  • 1 lb. pitted dates, chopped
  • 1 lb. citron, lemon peel and orange peel
  • 1 cup sour milk

Directions

Cream shortening, and sugar. Add eggs, molasses,beat well. Sift together flour, soda, spices. Combine with fruit and nuts. Stir until each piece of fruit is flour-coated. Add dry ingredients and milk alternately to creamed mixture. Pour into fruit cake pans lined with 3 layers of brown paper rubed with shortening. Place in oven with dish of hot water to keep cake moist.

Bake in a very slow 250F oven, 3 to 5 hours, depending on size of pans. After 1 hour's baking, cover surface with brown paper or foil. Cool, remove from pans, wrap with waxed paper - store in a cool place.

To serve, cover with marzipan, top with icing-sugar frosting. Decorate with maraschino cherries and citron peel.

Yeild: 10 lb. approx.
one 8" x 8" cake and
one 5" x 5" cake

Economy Salad Dressing

Ingredients:

  • 1 1/3 cups (1 can) Eagle Brand Sweetened milk
  • 1 teaspoon salt
  • 1/2 cup vinegar
  • 1 teaspoon dry mustard

Directions:

Blend together thoroughly. Stir until thick.

Chill before using.

Makes 1 3/4 cups.

Canadian Salad Dressing

Ingredients

  • 2 eggs, beaten until light
  • 1 teaspoon salt
  • 1 teaspoon dry mustard
  • 1 cup vinegar
  • 1 can condensed Eagle brand sweetened milk

Directions

Mix together eggs, salt, mustard and milk. Beat vigorously for a few minutes. Add vinegar, stir well and put in sealer.

Set aside for a few hours to thicken.

Store in cool place.

This dressing will keep for weeks.

Uncooked Relish

Ingredients

  • 3 fresh, hot peppers
  • 12 washed, cored large green tomatoes
  • 12 red, cored apples
  • 2 peeled onions
  • 2 cups cider vinegar
  • 2 cups white sugar
  • 3 tablespoons salt
  • 1/4 cup lemon juice
  • 1 teaspoon mustard seed

Directions

Remove seeds and white membrane from peppersand grind peppers, tomatoes, apples and onions (course blade).

Add remaining ingredients and mix thoroughly. Put into sterilized jars and seal.

Makes 5 pints.

Green Tomato Pickles

Ingredients

  • 4 quarts of green tomatoes
  • 2 quarts onions
  • 1 quart vinegar
  • 1 1/2 cups brown sugar
  • 1 1/2 cups corn syrup
  • 1/ cup mixed pickling spice

Directions

Wash and slice tomatoes, onions and cover with brine of (1/2 cup salt to each quart of water). Let stand over night. drain and wash in cold water.

Add vinegar, sugar, corn syrup and spices (tied in cheese cloth).

Simmer slowly until onions and tomatoes are very tender and darkened considerably (1 to 1 1/2 hours or more).

Put in sealers.
